An institutional/general cook is a volume cook that is expected to follow a written menu to prepare a substantial quantity of food, making appropriate substitutions as necessary. An institutional cook might work in a long-term care facility (such as a nursing home or retirement village), a school, a daycare, a prison or jail, or another institution. In some environments, the cook must prepare specialized diets such as pureed food or thickened liquids. An institutional/general cook's work hours generally fall between 5 a.m. and 8 p.m., depending on the facility. A breakfast/lunch cook's shift might last from 5 a.m. until 1:30 p.m., for example, while a dinner cook's shift might last from 11 a.m. until 7:30 p.m.
