Job Description for General/Institution Cook
An institutional/general cook is a volume cook that is expected to follow a written menu to prepare a substantial quantity of food, making appropriate substitutions as necessary. An institutional cook might work in a long-term care facility (such as a nursing home or retirement village), a school, a daycare, a prison or jail, or another institution. In some environments, the cook must prepare specialized diets such as pureed food or thickened liquids. An institutional/general cook's work hours generally fall between 5 a.m. and 8 p.m., depending on the facility. Shifts tend to be divided into breakfast/lunch and dinner. There is usually a dietary services manager in charge of ordering supplies, maintaining the budget, and writing the menu; in a long-term care environment, the manager might also be a morning cook. An institutional cook may also be responsible for supervising one or more dietary aides who wash dishes, clean the kitchen, and assist the cook with preparatory work.
No experience is generally needed to start in this position, though a general food service background is helpful. This job is usually physically demanding, requiring the cook to be on their feet in a hot kitchen for most of the day. They must also be comfortable bending, stooping, lifting, and carrying heavy items. They might also be expected to stand in one place for a length of time to serve meals.
