What is it like working as a Project Engineer?

Good place to start and grow.
Project Engineer in Irvine:
Pros: Very interesting project. Very little micromanaging.
Cons: It's a big company with very different divisions of consulting ranging from natural/man-made disaster impact design and analysis to risk and reliability assessment. Not all sectors do well in a given 1-3 year period and the thriving sectors will suffer to shore up the weaker sectors. Such is life working for a company with such a range of services, but it's discouraging sometimes.
